Recipe: Raw Vegan Brownies

Now, I know what you're probably thinking... "RAW? VEGAN? Hmmm....sounds a bit hippy to me, I like my brownies to be normal..." but give me a chance and read on!

As I'm sure you'll know if you've read my blog before, I've been a vegan for 3 and a half years now and I'm so glad I made that change. I feel much healthier and happier knowing that my diet isn't hurting any animals, people or the environment, and the food is delicious! I've never tried any raw cooking (should that be 'cooking' as it's not 'cooked'?!) before though, but I have got a bit obsessed with raw brownies from Cafe Kino in Bristol.  They're scrumptious but they cost £2.50 for just 1(!) so I thought I'd try making some myself, and then I can eat loads! Having looked into raw veganism it is something I'd like to try a bit more of, as from a nutritional point of view the recipes contain natural, fresh ingredients and as they aren't cooked (or are only cooked at low temperatures) the nutrients and enzymes aren't destroyed.  I'd like to increase the amount of raw foods instead of 'naughty' foods, as e.g. in the case of my brownies you are eating dried fruits and nuts rather than refined sugas and fat, which is better for your health, blood sugar and mood.  But I'll only swap the odd thing for raw foods at the moment.  Why not try swapping some of your usual treats for vegan or raw vegan versions for Lent? :)

Here's the recipe!

2 cups walnuts
1 cup dates
1/2 cup cocoa powder, raw cacao powder or raw, vegan carob powder
1/2 cup dried cherries
1/2 cup dried apricots
1/2 tsp ginger
1/2 tsp cinnamon
2 tbsp raw coconut oil
4 tbsp agave syrup

1) Put aside 1/3 cup of the walnuts
2) Blend all the ingredients in a food processor until really fine and coming together
3) Add the final 1/3 walnuts and blitz for just one quick pulse so large, chunky walnut-ty bits remain
4) Press the mixture down into a 9" cake tin
5) Chill for minimum 1 hour, but preferably overnight


I'll upload a photo of my next batch, and I'm also planning to make a raw, vegan, sugar-free chocolate-fudge icing next time too :)
